Fruit Bars for Labor (or anytime) 

1/2 cup butter, softened

1/2 cup apple sauce, plain unsweetened

1/2 cup brown sugar

1 egg

1 tsp vanilla

1/2 cup coconut, unsweetened flakes

1/4 tsp salt

1/2 tsp baking soda

1 cup whole wheat flour

1 cup rolled oats

1 cup frozen fruit, blueberries, raspberries, rhubarb or peaches

(optional: Add up to 1 cup slivered almonds or pecan pieces)

1. Combine butter, sugar, apple sauce, vanilla and eggs in a large mixing bowl.  Mix to combine.  

2. Add remaining ingredients.  Mix until combined.  The dough will be thick like cookie dough.

3.  Add 3/4 of the dough to a 8x8 pan that has been prepared with cooking spray.  Sprinkle frozen fruit on the top.  Add the rest of the dough by spoonfuls on top.  

4.  Bake at 375 degrees F for 35 minutes or until golden brown.
